Taste fresh buffalo mozzarella in Macroom, Co. Cork, and discover water buffalo farming, Irish cheese-making and local food heritage.

There is something special about tasting food where its story begins. Picture a fresh piece of creamy mozzarella on your plate, knowing that the milk came from water buffalo grazing in the green fields just a short walk away.

At Ó Tuama Tours, we invite visitors to discover buffalo mozzarella Ireland at its source, on a working water buffalo dairy farm in Macroom, County Cork. Our experience combines a guided farm walk, stories of Irish agriculture and a tasting of fresh buffalo milk products.

Guided by local chef and host Dorothy Ó Tuama, our tours offer a warm and personal introduction to the animals, farming and food production behind some of Ireland's distinctive buffalo dairy products.

Whether you are a food lover, visiting Cork on a staycation, travelling from overseas or organising a private group, our farm offers an opportunity to experience West Cork through its land, food and people.

Discover Buffalo Mozzarella Ireland at the Farm

Buffalo mozzarella begins with the milk — and at Macroom Buffalo Farm, that story starts with the herd.

The farm produces fresh buffalo milk cheeses including mozzarella, ricotta, feta and halloumi, as well as yoghurt. During our Tour and Taste experience, visitors can sample three signature buffalo milk cheeses and yoghurts.

Buffalo milk has a naturally rich and creamy character, which gives buffalo mozzarella its distinctive texture and flavour. On our tours, we explain how the milk is transformed into cheese and why buffalo dairy has become such an interesting part of Ireland's food landscape.

The tasting is deliberately simple. Instead of overwhelming the cheese with complicated flavours, we allow visitors to appreciate its freshness and character.

For many guests, this is the moment when the farm-to-table story really comes together: the animals you have just learned about, the milk they produce and the food you are now tasting are all connected.

Meet the Water Buffalo Behind the Cheese

Before tasting the cheese, we take time to understand the animals that make it possible.

Macroom Buffalo Farm has a remarkable history. In 2009, farmer Johnny Lynch brought 31 water buffalo from Italy to his family's farm near Macroom after generations of traditional dairy farming. The herd has since grown to more than 850 animals.

Today, the farm is home to one of Ireland's most distinctive water buffalo dairy operations. Visitors can learn about the herd, dairy farming and how these animals have adapted to life in the Irish countryside.

Our water buffalo farm Ireland experience is not simply about looking at animals. We want guests to understand the relationship between farming, the land and food production.

The green fields of County Cork provide a natural setting for the experience, while the farm's history shows how Irish agriculture can embrace new ideas while remaining connected to family farming traditions.

From Fresh Milk to Farm-Made Cheese

One of the most interesting parts of the experience is discovering what happens between the field and your plate.

Buffalo mozzarella is traditionally made using the pasta filata, or spun-curd, method. The curd is heated and worked until it develops its smooth, elastic texture before being shaped into mozzarella. The Macroom farm's own story of buffalo mozzarella is closely connected with this traditional cheese-making approach.

During our tours, visitors can learn about the journey from buffalo milk to cheese and see how farming and food production are connected.

The farm also produces other buffalo milk cheeses, giving guests the chance to compare different flavours and textures during the tasting.

For food lovers, this makes the experience particularly rewarding. You are not simply told that local food is important — you can taste the result of the work that happens on the farm.

A Private Farm Tour and Tasting with Dorothy

Our private farm tour and tasting is designed to be relaxed, personal and informative.

Dorothy Ó Tuama is a local chef, host and Fáilte Ireland-registered tour guide. She brings together her knowledge of food, Irish hospitality and the farm to create an experience that feels more like being welcomed into a local story than following a standard sightseeing itinerary.

The standard Tour and Taste experience lasts approximately 90 minutes. Guests enjoy a guided walk around the working farm before tasting three signature buffalo milk cheeses and yoghurts.

Because our tours are private booking experiences, your family, friends or group can enjoy the visit together rather than joining an unrelated public group.

We also offer educational experiences for secondary and third-level students, where the focus can include sustainable farming, food production, biodiversity, business and culinary studies.

Irish Food Heritage and West Cork Flavours

Food in Ireland has always been connected to the countryside. From dairy farming and bread-making to local cheeses and seasonal produce, Irish food heritage is built around the relationship between people and the land.

Our farm adds an unusual chapter to that story.

Water buffalo may have originated far from Ireland, but the Macroom herd has become part of a modern Irish farming story. Their milk is transformed into locally produced cheeses, bringing together farming, craftsmanship and food culture.

We believe sustainable farming is easier to appreciate when you can see it first-hand. Walking through the fields, learning about the herd and tasting the finished products helps visitors understand the journey from farm to table.

For travellers looking for authentic West Cork food experiences, this is a chance to discover local food in its natural setting.

And if you are searching for things to do in Macroom, a buffalo farm visit offers something different: countryside, animals, Irish food and local storytelling in one experience.
